TANDOORI CHICKEN AND AVOCADO PIZZA
Ingredients:
Tandoori Chicken
- 500g Chicken thigh Fillet
- Tandoori marinade
- 1 tbsp Plain Yoghurt
- 1/2 tsp Orange food colour
- 2 tbsp Lemon juice
- 1/2 tsp Ginger, crushed
- 1/2 tsp Garlic, crushed
- 1/2 tsp Coriander powder
- 1 tbsp Chilli powder
- Salt to taste
Pizza Toppings
- Tomato Sauce
- Mozarella Cheese
- Sliced Avocado
- Capsicum
- Spanish onion
- Walnuts
- Yoghurt
Method:
- Preheat oven to 200°C.
- In a large bowl, mix in the yoghurt, coriander powder, chilli powder, ginger and garlic, until the yoghurt is nicely coated.
- Mix in the marinade, food colouring and lemon until well combined.
- Evenly coat the chicken and set aside to rest for 1 hour.
- Line a baking tray with baking paper and place the chicken evenly across the tray.
- Cook the chicken in the oven for 7 minutes, then baste with butter.
- Cook for another 8 minutes.
- Prepare the pizza base on baking paper and add tomato sauce and mozarella cheese.
- Once the chicken has cooked, slice and then add to the top of the base.
- Add the capsicum, onion and walnuts and cook for 10-12 minutes.
- Once cheese is golden, garnish with sliced avocado and drizzle a small amount of yogurt on top.
