We love the convenience of Forrest Hotel, it’s so close to Manuka village cafes, restaurants and boutique shops. Why do you visit Canberra so much? We love a night at the theatre, seeing an exhibition at the National Gallery, National Museum or Old Parliament House and that’s just to name a few of the attractions we enjoy. What surprised you during your stay at Forrest this time? I was so surprised to learn that you also have one and two-bedroom apartments available; after staying here for 10 years I had no idea and enjoyed the extra facilities. What did you enjoy about your one-bedroom apartment? We loved the full-size kitchen comfortable living space and laundry facilities in the apartments, we also found the B-B-Q area and landscaped gardens very pleasant. ANZAC DAY NATIONAL CELEBRATION

Tuesday 25 April - starts with 5.30am dawn service
Australian War Memorial and Anzac Parade, Reid

The Nations capital of Canberra commemorates Anzac Day with the early dawn service at the Australian War Memorial. The Anzac Day Canberra dawn service can be quite chilly in the brisk early morning air. So make sure you rug up as it all starts around 5am. It is a fabulous event held with great dignity.

The dawn service is followed later around 10am by the National ceremony and march. In between the service and the march it is a good opportunity to have some tucker with an Anzac Breakfast. Many of the cafes and restaurants of Canberra will be open to serve. And then later in the day after the march it's ideal to catch an Anzac Day Lunch and reflect on the earlier services.

TANDOORI CHICKEN AND AVOCADO PIZZA

Ingredients:

Tandoori Chicken

500g Chicken thigh Fillet
Tandoori marinade
1 tbsp Plain Yoghurt
1/2 tsp Orange food colour
2 tbsp Lemon juice
1/2 tsp Ginger, crushed
1/2 tsp Garlic, crushed
1/2 tsp Coriander powder
1 tbsp Chilli powder
Salt to taste

Pizza Toppings

Tomato Sauce
Mozarella Cheese
Sliced Avocado
Capsicum
Spanish onion
Walnuts
Yoghurt

Method:

Preheat oven to 200°C.
In a large bowl, mix in the yoghurt, coriander powder, chilli powder, ginger and garlic, until the yoghurt is nicely coated.
Mix in the marinade, food colouring and lemon until well combined.
Evenly coat the chicken and set aside to rest for 1 hour.
Line a baking tray with baking paper and place the chicken evenly across the tray.
Cook the chicken in the oven for 7 minutes, then baste with butter.
Cook for another 8 minutes.
Prepare the pizza base on baking paper and add tomato sauce and mozarella cheese.
Once the chicken has cooked, slice and then add to the top of the base.
Add the capsicum, onion and walnuts and cook for 10-12 minutes.
Once cheese is golden, garnish with sliced avocado and drizzle a small amount of yogurt on top.

VEGETARIAN SPAGHETTI WITH TOMATO CONCASSE

Ingredients:

6 Tomatoes; ripened
1 Garlic Clove
1 Onion; chopped
½ tsp Chilli Flakes
½ tsp Brown Sugar
1 tbsp White Wine
Vegetables of your choice; cubed, blanched or roasted
500g Spaghetti

Method:

Boil water in a pot, fill until halfway.
Slit the tomatoes in a criss-cross pattern and remove the tops.
Place the tomatoes into the water and boil for two minutes, then cool them in iced water.
Peel the skin from the tomatoes, then deseed them.
Chop the tomatoes finely and set aside.
In a pan, sauté the vegetables, then set aside.
Heat Olive Oil in the pan and add the onion.
Once the onions have cooked through, sauté the garlic and chilli flakes until the raw flavour is gone.
Add the wine and tomatoes and cook through until a glossy texture appears.
Mix in the vegetables.
Boil the spaghetti according to the packet.
Drain the spaghetti and mix in the Concasse.
Serve immediately with a piece of parmesan bread.

Canberra is often referred to as a big country town. Which is reasonable, seeing as pretty much everyone knows everyone, or knows of everyone. The capital has some gorgeous and green suburbs and a CBD, resembling a small version of Sydney.

We’re sure we are all feeling the effects of cabin fever currently and are feeling a little bit cooped up. The government has recommended that we honour social distancing but remain active where possible in groups of no more than of 2. If you are about to visit Canberra, and don’t want to be stuck inside all day, what better way to pass the time then getting out of the house, with some fresh air to clear your mind, blast out your music (with headphones on) and get some endorphins rushing through your brain.

Canberra has beautiful scenic routes to walk through. Going out for a daily walk, should help put the mind at ease. You can do it on your own, it is free!

There are a few tracks that we would recommend trying. These vary in lengths and gradient. The crowd-pleaser route is ‘Lake Burley Griffin’. To walk the entirety of the lake, it takes around two hours, but the bridge-to-bridge route is great for a shorter walk with lovely views of national monuments. Lake Burley Griffin is a leisurely walk as it is mostly flat. The second route that locals love is ‘Mount Ainslie’. However, because it is a mountain, it is a much steeper track. This one is great if you want a more challenging walk. The scenery is bushlands and the summit, looks over the Parliamentary Triangle, so if you love Australian botanicals, you will love this walk. The National Arboretum have many tracks throughout the reserve. These allow you to see more of Canberra and the icons. This is also a destination for a scenic drive through the gallery of trees. Our final walking recommendation is a hike to the wonderful Gibraltar Falls. Walk along the trodden path or make your own adventures along the waterfall and riverbank.

"The staff were very understanding when I had to change my non-refundable booking at the last minute due to changes in medical procedure dates. We love staying in the 2bd units for the space & central location. The restaurant is fantastic. Haven't had a bad experience yet. We ordered continental breakfast which was delivered the night before so we could get up whenever we felt like it!! Very handy."

STICKY DATE PUDDING

Pudding Ingredients:

1.2L Water
1kg Dates
4 tsp Bicarbonate Soda
240g Butter
600g Brown Sugar
8 Eggs
1kg Self Raising Flour
5ml Vanilla Essence

Butter Scotch Sauce Ingredients

480ml Cream
465g Brown Sugar
150g Butter

Pudding Method:

Preheat oven to 170°C and grease the desired mould with butter, set aside.
Mix the water, dates and bicarbonate soda in a pot and bring to boil.
Once boiled, simmer for 15 minutes until the dates are soft. Set aside until the mixture is room temperature.
Mix the butter and sugar in a food processor on slow speed, until combined.
Slowly beat in the eggs on a medium speed and add the vanilla essence.
Once combined, slowly pour in the flour.
Fold in the date mixture until combined.
Pour the mixture into the moulds and bake in the oven for 30 minutes.
The pudding is fully cooked when a skewer inserted into the centre comes out dry.

Butter Scotch Sauce Method:

Mix the cream, sugar, and butter until combined.
Pour into a pot and bring to boil.
Once boiled, simmer for 10 minutes.
Serve with the pudding immediately.

"Awkwardly between moving, and the virus disrupting tenants vacating, I found this property almost by accident. But what a find; location is central, and an easy walk to shopping and the lake, and room rates for an executive apartment are very reasonable. My apartment is a one bedroom, fully equipped ground floor option. Wifi is free, there is a restaurant currently catering via a take-away/room service facility, and it is a delightfully quiet location."

CURRIED COCONUT AND CHICKEN SOUP

Ingredients:

125gm Dry Egg Noodles
4 Tbsp Vegetable Oil
2 Tbsp Yellow Curry Paste (can use Green Curry Paste)
1 Cup Coconut Milk
2 Tbsp Coconut Cream (can be taken from the top of the Coconut Milk)
1 ½ Cup Chicken Stock
2 Tbsp Palm Sugar
2 Chicken Thigh (cubed)
2 Tbsp Fish Sauce
Coriander to garnish
Bird Eye Chilli to garnish
Oil for Frying

Crisp Noodle Garnish (optional)

Method:

Soak ¼ of the noodles in hot water until they begin to soften, then drain.
Heat oil in a wok and cook the softened noodles until crisp, then put to the side.

Curried Coconut and Chicken Soup

Method:

Heat oil in the wok and add the curry paste and coconut cream, stir until fragrant.
Add the remaining coconut milk, chicken stock, and palm sugar, stir until combined.
Add the cubed chicken thigh and bring the curry soup to a boil. Once boiled, simmer for 30 minutes.
In a pot, boil the remaining noodles in water according to the instructions on the packet, then place the noodles into serving bowls.
Once the chicken is tender, stir in the fish sauce. (Add more palm sugar for extra sweetness or more fish sauce for extra saltiness)
Once combined, pour the chicken soup into the serving bowls.
Top each bowl with the crisp noodles and garnish with coriander and sliced chilli.
